Gotta love when your mom gets you the perfect gift. For our anniversary, mom got us the Seriously Simple Deck of recipe cards. She had listened to me say how much I missed cooking, but didn’t really have the time and voila, she found this.
Tried the first recipe on Sunday night after arriving home from a wonderful weekend in Yosemite.
Cooked the Chicken Paillard with Pistachio-Pesto Vinaigrette (made a few noteworthy changes: asked the butcher butterfly the chicken breasts to save time from hammering them out, only got 3 chicken breasts split this way as they were huge, used pine nuts in place of pistachios as the pistachios available at the store were heavily salted).
I served it with a side of spinach with a dash of water and a couple cloves of garlic that I heated up in the microwave then seasoned with pepper and topped with a bit of olive oil plus some fresh pasta.
The meal was delish and I can’t wait to make the next meal from the deck! Plus I discovered that the author has a website called Simply Delicious with even more recipes.
There was so much leftover that I made chicken tacos last night for dinner from the leftovers.
