There is something so satiating about a home cooked meal. Although not all of the weeks looked appealing to me, Week 1 seemed to have the most meals that we would both like.
D doesn’t like when I try to get too vegetarian on him and also prefers not to eat salmon. I prefer not to eat pork, particularly pork chops or pork loin, perhaps it is the Jew in me or perhaps I just do not like the texture. As my best friend points out, I do enjoy bacon and I have also enjoyed pork belly, so it is not really all pork products just certain pork products.
We enjoyed the simplicity of the Tomato Soup and Roast Beef Sandwich recipe. I recommend using a lid to weight down the sandwiches for extra nice grill marks.
Drat I didn’t take a photo of the deliciousness as didn’t notice until afterwards that Real Simple asks you to submit photos of the recipes – I think I will be making that recipe again!
Arugula seems to be off the shelves around here this week, so I substituted mache in the Tomato Soup and Roast Beef Sandwich recipe and spinach in the Pork Chops With Roasted Beets and Oranges recipe. Both were delicious with the substitutions. Next time I will serve the Chicken With Potatoes, Bacon, and Cabbage as shown on Real Simple as more of a salad as I think it would be even better.
