When you are restricting your food, you look for every way to “indulge” a little bit. This delicious wrap is not really even that indulgent, but boy does it taste good! I discovered the basic recipe on Goop. Unfortunately, the recipe is no longer appearing on GP’s site, which I think is a bit of a drag, so I have included it below. This simple recipe has definitely been one of our standby recipes during the Cleanse as it has D’s much wanted protein wrapped up in a delicious tortilla with hummus being the “secret ingredient.”
Well the secret got out last weekend when we were at Whole Foods stocking up on their reasonably priced frozen fruit for our shakes as well as some other clean ingredients. We have been having this wrap for several weeks, so imagine D’s surprise when he said to me “I don’t like hummus” and I respond “well, it has been in the wrap each time.” So maybe it is not a favorite ingredient in our home, but it certainly adds some much needed flavor to this wrap.
Chicken Wrap (makes 1, easy to double for lunch for 2)
– 1 wheat free tortilla (we like the brown rice tortillas best)
– 1 chicken breast (she calls for poaching the chicken, but we prefer it grilled after marinating it in a bit of olive oil, vinegar and mustard)
– a few leaves of kale, cabbage or swiss chard
– 2 tbsp of hummus
– salt & pepper to taste
Grill the chicken breast. Steam the greens of your choice. Spread the hummus on the tortilla, top with shredded or sliced chicken and veggies, then wrap it all up.
