Every year, we are fortunate to venture to Yosemite to celebrate D’s birthday with many other Virgo friends. Since it is his birthday, I always ask him what kind of cake he would like. This year he wanted yellow cake with white frosting.
I pre-made the cake layers and frosting at home to make it easier to assemble on Saturday night. To keep the cake layers fresh, I popped them in the freezer.
At home, I had already planned a modification of the recipe to add a layer of jam in the middle. The cake sounded too sweet between the vanilla frosting and the white chocolate chips, so I thought raspberry jam would cut the sweetness with a bit of tart.
We had leftover berries from the day before and one of the children suggested adding them on top of the cake, which I thought was a great idea.
As you can see, the berries really added a lovely touch to the cake, which would have been quite bare otherwise.
