With my yoga teacher training program consuming my weekend afternoons, I have gotten progressively more adept at maximizing my weekend mornings. Lately, Sunday mornings have been cooking time. I have really been enjoying several cookbooks recently, such as Ripe, Weeknights with Giada, and Giada’s Family Dinners while supplementing with recipes from the web.
Cooking on Sundays includes making soups for the week’s breakfast, prepping dinner for Sunday night, and sometimes preparing a weeknight meal in advance.
Today was no exception for the cooking as I prepared two kinds of soup: Roasted Carrot, Fennel & Apple Soup and Spicy Kabocha Pumpkin Soup. These soups were inspired by the contents of our Farm Fresh to You box from Capay Farms.
