Last week I felt like crap, literally. Not one to let that continue, I decided to take matters into my own hands. A new medicine completely wiped me out causing me to cancel plans with dear friends and even a weekend getaway. I want to get and stay healthy.
After an inspired conversation with my mom, I went online to look at nutritionists that might be part of insurance and well that went how things in the medical field can go, nowhere fast. Then I remembered that a good friend of mine had studied nutrition, so I popped over to her site, Thoughtful Content.
I read a few posts and watched a video about produce over on Kris Carr’s site (of the Crazy, Sexy, Cancer, Diet and Wellness fame). I have always been interested in her ideas about curing what ails you by changing what you put into your body, but some of her recipes have seemed a little complex to me. Well, this video lead me to look at recipes on her site where I uncovered an irresitable and EASY recipe that inspired me to cook dinner tonight – Amazing Alfredo.
My husband had kindly gone to the grocery store tonight to restock our fridge. Before he got home, I was able to whip this recipe up with stuff we had in our freezer, on our counter and in our pantry – cashews, pine nuts and fresh pasta (freezer), lemon, garlic, salt and pepper (counter), nutmeg (pantry). Felt a bit Giada like by having all of these items on hand. The sauce was super simple to make, so I left it simmering until he got home.
He was famished when he got home, so I gave him a taste of the sauce. He liked it! I mentioned there was a surprise about the dinner. As he was unpacking, he asked if we should add sausage to the pasta. My response, “ummm well sausage will ruin it.”
All I had to do when he got home was toss the pasta into the boiling water and voila dinner on the table in no time.
I waited until we were at the table to share that the surprise is that it is vegan, hence why sausage would have ruined it. Unfortunately, there is not a photo of either of our plates with pasta as I forgot to take a photo and they were both clean in no time.
