Okay, well maybe not laziness. I decided to relish desire to chill out on Saturday morning after a gorgeous walk with my best friend in the morning and a killer 15+ hour day at work the day before, which meant that a trip to the Farmer’s Market would not happen.
I also decided to place another order with Good Eggs as I ease of picking up our groceries without navigating the grocery store as well as the delicious quality of all of the food. Alas, Good Eggs pick up happens on Tuesdays, which means that I still had Sunday and Monday dinners to figure out.
Rather than head to the store, I first headed to my freezer. Lucky me, I keep our decidedly small freezer well stocked. Sunday: Turkey Meatballs with Spinach Pasta and a Meat Sauce. Monday: Corn Bisque with Red Bell Pepper and Rosemary plus Rosemary Biscuits
From the freezer: meatballs, meat sauce, spinach pasta, frozen corn, biscuit mix and veggies for the stock
From the pantry: basil grape seed oil, dried rosemary and cayenne
From the store: red bell pepper, carrot, celery, and half and half
The better news, all of the recipes were healthy and delicious!
