This weekend involved a bit more running around than usual, so it felt good to have a Monday night in.
I like to tear recipes out of magazines when they sound good. This recipe for Cauliflower Soup with Creme Fraiche came from the Wall Street Journal. Now a financial paper may not be your first choice to find a recipe, but this one was good. It took a little time to prepare, which I think allowed the flavors to meld.
Low and slow for the onions and celery then a bit warmer for the cauliflower. Added my compost veggie stock to finish it off.
I am somewhat of a freezer foodie. I like to freeze leftovers before they spoil to save them for future use. Since soup alone did not seem quite enough for dinner, I pulled out the other half of bread from the night I made Garlic Confit Toast from Bon Appetit a few weeks ago. Thankfully, I still had some of the garlicky goodness to smoother on top of the loaf.
Monday night at home for the win – and it was event a meatless Monday.
