2016 is getting off to a delicious start. Our veggie garden is in full bloom and several times a week we enjoy fresh veggies from our garden. It is quite different eating food that you have grown yourself.
For over a week, D has been craving a pork burrito from a place he enjoys, so I decided that tonight’s Sunday supper would be my first attempt at homemade carnitas burritos.
While I enjoy making corn tortillas, I opted to buy flour tortillas for this endeavor.
I pulled out a recipe from my recipe binder that I found in Real Simple, but it was not quite hitting the spot. I popped over to Joanie Simon’s site and discovered a recipe for carnitas that seemed perfect.
January is prime citrus season in Arizona, so I plucked some oranges from our neighbors tree. Everything else was in our pantry (a well-stocked pantry is key). The pork shoulder butt came from our local Whole Foods and it was a beautiful cut of meat.
If the delicious smell wafting from our Fagor pressure-cooker is any indication, tonight’s dinner will be a perfect Sunday treat.
