As I adjust to this new life, I find myself needing/wanting/enjoying feeding friends. Two friends ended up with wicked bugs this week, so I pulled chicken stock out of my freezer to deliver to them.
Friend one ended up with chicken noodle soup as I try to clear out my pantry as well. I had some egg noodles, so it was an all-in-one care package when they returned from their adventure.
Friend two was knocked down by similar bug, but only got two containers of chicken stock as that is what I had.
Friend three had a baby a few months ago. Since I had yet to deliver her a meal, I decided to repurpose my Sunday Social dinner with K & J as a decadent chicken casserole. It netted a ginormous casserole for them and 3 little ramekins for me = #winning.
I tossed together leftover flat roast chicken and sautéed carrots with orecciette, sautéed onions and garlic finishing it off with homemade yogurt and topping it with cheddar and parmesan.
Oh, I also delivered herbs from my garden to another friend…..
Apparently I need to learn a cooking size other than entertaining or just embrace how much people appreciate good food and how much joy it brings me to make it for them.
Oh, and apparently this is my second post with the same title, so I must really enjoy cooking for people. 🙂
