This spring someone asked me if I had a signature dish. At the time, I said no, however I now realize that spatchcocked chicken is my go to dish for entertaining. I love that it comes out perfectly cooked every time and that there are endless possibilities, so it is never really the same dish twice.
That’s probably why it did not occur to me that I have a signature dish. I always have a whole chicken in my freezer. As a newly single person, a whole chicken is more than I can eat in a week, so I save it for entertaining. Generally, I used the recipe from Mad Hungry roasting it in the oven.
Yesterday, I had a spontaneous pool party with girlfriends and neighbors. The weather was perfection as the monsoons have finally cooled the temperatures down around the Valley. I opted to cook outside yesterday on the BBQ.
I tweaked a Martha Stewart recipe as I did not have an onion and decided that was not a worthy trip to the grocery store. I used rosemary and oregano (garden fresh) plus three cloves of garlic then followed the rest of the recipe.
Side dishes were grilled Hasselback potatoes (soooooooo good on the grill!!) and a modified wedge salad (heirlooom baby tomatoes, green onions, romaine, TJ’s bleu cheese dressing).
Oh and Hasselback potatoes may just also become a signature dish….
