Life lately has been a whole lot of weekend cooking. We had houseguests 3 out of the last 4 weekends. I love to entertain. Feeding people good food fills up my soul, truly.
While I love to entertain, it is also important for me to find balance to not overdue it and wind up exhausted. Part of my method to achieve this is to make meals that are prepped ahead to cook away in the oven and end up with meals that have a leftover ingredient that is easy to morph into something else that is delicious.
